Blend the sugar and the egg yolks.
Mix in well and add the whole egg, then continue blending until the egg has completely disappeared.
Add the olive oil and flour, then mix in well before adding the milk.
Grease the base of a baking tin with extra-virgin olive oil, and distribute the cherries uniformly.
Pour over the cake mixture and bake in a pre-heated oven at approximately 180° (according to the type of oven).
Bake for 30-35 minutes.
Sprinkle the vanilla sugar over the flan and serve warm or cold.
